Ingredients:
- 1 cup Thoothukudi Nethili Karuvadu (Dried Anchovy, headless)
- 2 tbsp oil (preferably coconut oil)
- 1 medium onion, finely chopped
- 2-3 green chilies, slit
- 1 tbsp ginger-garlic paste
- 1 tsp turmeric powder
- 1 tsp red chili powder (adjust to heat preference)
- 1 tbsp tamarind paste (or use soaked tamarind pulp)
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1-2 tbsp curry leaves
- Salt, to taste
- Water (about 2 cups, depending on desired consistency)
Instructions:
- Soak the Dried Anchovies in warm water for 10-15 minutes to soften and remove excess salt. Drain well.
- Heat oil in a pan and add curry leaves and green chilies. Sauté until the leaves are crisp.
- Add the onions and sauté until golden brown.
- Add the ginger-garlic paste and cook until fragrant, about 1-2 minutes.
- Stir in the turmeric powder, red chili powder, coriander powder, and cumin powder. Cook the spices for a minute until well roasted.
- Add the soaked and drained dried anchovies, mixing them into the spice paste. Cook for 5-6 minutes until the anchovies start to soften and absorb the flavors.
- Add the tamarind paste (or soaked tamarind pulp) and salt. Mix everything well, then pour in water to create a gravy-like consistency.
- Let the curry simmer on medium heat for about 10-15 minutes until the anchovies are tender and the gravy thickens.
- Serve hot with steamed rice or chapati for a perfect meal.
